Yogurt marinated chicken — curried and broiled

Big thanks to PBS’s The Story of India for inspiration (FYI: it’s currently streaming on the PBS website and totally worth your time).

Tonight I used breasts (on hand), but I actually like this best with thighs, which are much more flavorful.  It can also be done with tofu, if you buy extra firm and expel excess water.  (And now a google search for firm body parts will produce my blog – take that internet pervs!)

Marinade:

Mix 1 c. plain greek yogurt  +

a spice blend of your choosing

I combined the following spices in roughly equal amounts (about 1/2 tablespoon): cumin, turmeric, coriander, ginger (ground), hot paprika, and garam masala.  Also included a big tablespoon of sweet paprika.

Coat your protein of choice in the marinade, and let it rest for an hour or so.

Strongly advise that before baking you turn on the kitchen fan and tie back your hair.  There will be some smoke.  Embrace it.

Broil on a baking sheet for roughly 6-8 minutes per side, until the meat begins to char slightly and resembles this:

Great on a salad or can become excellent chicken tikka masala.   Namaste, yes.
